Cheesy Tuna Quesadillas

Snacking is our favorite way to eat around here. But like, I mean snacking on real food that has a nutritious balanced of protein and fiber for stable energy, not grabbing a handful of whatever is hiding out in the pantry and having a sugar crash 30 min later. I want our food to prioritize protein and fiber to fuel more hours of the chaotic energy that comes with having two toddlers while being very, very pregnant.

and because I’m so picky with ingredients, I can’t just buy fast food or random packaged snacks at the store. They are high energy, high sugar crash rate, and usually don’t have a single nourishing ingredient in them.


I have a few high protein, high fiber staple snacks that are go-to:

Charcuterie boards always with Parmesan cheese, a few pieces of fresh fruit, and salami slices if I have them in my fridge.

Parfait bowls with Greek yogurt for protein and I add in granola and ground flax for more fiber.

But, we get bored of eating the same thing over and over. So I am in constant need of easy-to-make snacks (actually easy to make) that double as a full meal, like these Cheesy Tuna Quesadillas that are a mouth party and nourishing perfection at once.

Tuna is an easy protein, since no prep is required. Add in some melty cheese and a tortilla, top it with some siracha for a kick, if that’s your thing, and you have yourself a snack worthy of being on the list of your best snack moments.


Cheesy Tuna Quesadillas

Ingredients
  • 2 cans tuna (my fav is ahi)

  • 3 small tortillas (use almond flour ones for gluten free + less carb while still being super clean)

  • Shredded cheese, measured with the heart

  • Siracha for topping (optional)

  1. 1. Heat a large nonstick skillet.

  2. 2. Open both cans of tuna and mix it up in a bowl to break apart the pieces and make it easy to spoon into the tortillas

  3. 3. Place the tortillas on the skillet.

  4. 4. Top with shredded cheese and let it melt a little before adding tuna on top.

  5. 5. Fold tortillas in half and cook until it’s melded together. This will take like a minute so watch carefully!

  6. 6. Remove from heat. Top with siracha if desired and enjoy every little bite! ♥️
