This antioxidant rice is delicately sweet, a little nutty, and flavor packed.
It’s loaded with antioxidants from pomegranate, cinnamon, and dried cherries, with minerals and protein from bone broth.

ANTIOXIDANT RICE
INGREDIENTS

1 cup rice

1 onion, chopped

1 tbsp grassfed butter

1 cup cold pressed, pure pomegranate juice

1/2 cup bone broth

1 tsp pumpkin pie spice

Salt + pepper to taste
MAKE IT

Soak rice in cold water for at least an hour. This helps remove arsenic from rice and also makes it cook up fluffier. Drain water.

Heat butter in a pot on medium/high heat and add chopped onion. Sauté until softened and translucent.

Add in pumpkin pie spice (can also just use cinnamon) and then rice.

Add in pomegranate juice and bone broth.

Bring to a boil then cover and reduce heat to low.

Cook until water has evaporated (about 10 min) Fluff with a fork.

Serve with favorite protein and yogurt.
