Creamy, fiber loaded, gut-healthy pasta salad because fiber is just as important as protein and deserves some spotlight.
I have the pickiest toddlers that exist and they ask for this daily. Itโs awesome to have a huge batch prepped in the fridge for easy lunches.
My mentality around meal prep is to make the meal you struggle with the most and have that ready to go. For me, itโs lunch. Itโs a busy time in the day and I donโt have the capacity to slow down and cook a nourishing meal. So itโs either I have something prepped or Iโll take the easy option and order out.
Having meals like this ready makes eating well so much easier.

Creamy Pasta Salad
2 cups cooked and cooled pasta (any shape you want, I used small macaroni so it would soak up the sauce!)
3 ribs celery
1 -2 bell pepper
1 cup Kalamata olives
1 head parsley
1 bag frozen corn, cooked
1 jar banana pepper (optional but adds tons of flavor!)
Sauce:
1 cup Greek yogurt
1/2 cup mayo
2 tbsp Dijon mustard
2 tbsp apple cider vinegar
2 tbsp maple syrup
Salt + pepper to taste
MAKE IT
Chop all veggies finely.
Make the sauce: Add all ingredients to a bowl and mix well.
Assemble pasta salad by adding all ingredients to a large bowl and mix well.
Store in the fridge for days of yummy lunch ๐
