Seedy high fiber granola

Why buy granola?

It’s one of the easiest (and satisfying) things to make. It can be made in huge batches, costs less than premade, and you can make it with zero ick ingredients and pack in the nutrition.

Once I started making my own, it had me wondering why I was ever buying it from the store. Continuously being disappointed in ingredients, sugar content, or flavor just not being quite right.

Now I make it exactly how I want it. Lots of nuts and seeds for those healthy fats and plant based protein power. I use pure, quality evoo that is anti-inflammatory instead of cheap seed oils that cause inflammation, and add in fiber with flax and chia seeds (pure and simple), and way less sugar than any version at the store (except the “no sugar added” versions which have added inflammatory ingredients that I don’t want anywhere near me).


SEEDY HIGH FIBER GRANOLA

2 cups rolls oats

3/4 cup pumpkin seeds

3/4 cup walnuts

1/2 cup sliced almonds

1/2 cup flax meal

1/2 cup chia seeds

1/2 cup almond meal

1 1/2 teaspoons sea salt

1 tbsp pumpkin pie spice (I love the flavor, use less if you aren’t huge on cinnamon)

1/2 cup extra virgin olive oil

1/2 cup maple syrup

2 teaspoons vanilla extract

MAKE IT

Preheat oven to 350F

Mix all ingredients well in a large bowl.

Pour onto baking sheet

Flatten out into a sheet

Bake for about 30 minutes or until golden and fragrant. My whole house smelled like cinnamon and maple.

Let cool and as it cools, it will harden up more.

Break up the pieces with a wooden spoon and store in your counter in a sealed container.
