I was shocked at how easy it was to recreate the flavors and textures of a crumbl cookie without any yuck ingredients.

They’re GIANT, free of gluten and refined sugars, and the only sweetener is in the frosting (and that’s a tad of pure maple syrup).
I’ve made these a handful of times, and they’re always a hit. Even my picky toddlers love them, and trust me, that says A LOT.

HEALTHY CRUMBL PUMPKIN COOKIES
1 cup canned pumpkin
2 eggs
1 cup Greek yogurt
1 tsp vanilla
2/3 cup almond flour
½ cup coconut flour
2 tsp baking soda
2 tsp pumpkin pie spice
ICING
1 container cream cheese
2 tbsp maple syrup (more if you like it sweeter)
½ tsp vanilla
½ tsp cinnamon or pumpkin pie spice
MAKE IT
Preheat oven to 375 F
Add all we cookie ingredients and mix.
Add in all dry cookie ingredients and mix again.
Scoop out heaping tablespoons and form into a ball, place on a parchment lined baking sheet.
Flatten the cookie dough because these won’t flatten much while baking.
Bake for about 15 minutes.
Let cool before you frost them.
MAKE FROSTING:
Add all frosting ingredients to a bowl, whisk well.
