Healthy Pumpkin Crumbl Cookies

I was shocked at how easy it was to recreate the flavors and textures of a crumbl cookie without any yuck ingredients.



They’re GIANT, free of gluten and refined sugars, and the only sweetener is in the frosting (and that’s a tad of pure maple syrup).

I’ve made these a handful of times, and they’re always a hit. Even my picky toddlers love them, and trust me, that says A LOT.


HEALTHY CRUMBL PUMPKIN COOKIES

  • 1 cup canned pumpkin

  • 2 eggs

  • 1 cup Greek yogurt

  • 1 tsp vanilla

  • 2/3 cup almond flour

  • ½ cup coconut flour

  • 2 tsp baking soda

  • 2 tsp pumpkin pie spice

ICING

  • 1 container cream cheese

  • 2 tbsp maple syrup (more if you like it sweeter)

  • ½ tsp vanilla

  • ½ tsp cinnamon or pumpkin pie spice

MAKE IT
  1. Preheat oven to 375 F

  2. Add all we cookie ingredients and mix.

  3. Add in all dry cookie ingredients and mix again.

  4. Scoop out heaping tablespoons and form into a ball, place on a parchment lined baking sheet.

  5. Flatten the cookie dough because these won’t flatten much while baking.

  6. Bake for about 15 minutes.

  7. Let cool before you frost them.

MAKE FROSTING:
  1. Add all frosting ingredients to a bowl, whisk well.
