HEALTHY CREAM CHEESE SWIRL CAKE

I dare to say this is the healthiest cake you’ll ever have, that taste and texture are of bakery standard! Big statement perhaps, but this cake is on my regular rotation for years and I can’t ever get over how good it is, given the nutritional value of the ingredients in it.

This is my foundational recipe for healthy cake, and I’ve posted it before but this version has a cream cheese swirl that is a fun new addition and really makes it feel like a treat!

Ingredients

For the Cake:

  • 5 tbsp grassfed butter, softened or melted

  • ½ cup coconut sugar

  • 2 bananas

  • 2 eggs

  • ⅔ cup apple sauce

  • ½ cup Greek yogurt

  • 1 ½ tbsp vanilla extract

  • 1 ¾ cup spelt flour

  • 1 tsp Baking soda

  • ¼ tsp salt

  • 2 tbsp cinnamon

For the Cream Cheese Swirl:

  • 1 container of cream cheese (I use Green Valley Lactose Free)

  • 2 tbsp cup coconut sugar

  • 1 egg

  • ½ tsp vanilla

  • ¼ cup flour

Instructions

For the Cake

  1. In a bowl, mix softened or melted butter with coconut sugar. Add all other wet ingredients and mix again.

  2. Add all dry ingredients, mix.

For Cream Cheese Swirl

  1. In a bowl, mix all ingredients together with a whisk or beater.

Assemble and Bake

  1. Pour half of the cake mix into a glass baking dish.

  2. pour in the cream cheese swirl mixture

  3. Add the rest of the cake mix.

  4. bake at 350 for about 1 hour or until a fork comes out mostly clean.

  5. Let cool and enjoy. Can store in the fridge for several days
