RAW KEY LIME PIE

Raw, coconut key lime pie bites. Delicious coconut key lime pie made with wholesome, easy to find ingredients with no baking or fussy measurements!

Ingredients

Filling:

  • 2 containers of cocojune’s new Blue Magic coconut yogurt.

  • 2 single-serve containers cocojune’s original cultured coconut

  • Zest +juice of 1 lime

  • ⅓ cup coconut oil, melted

  • ¼ cup maple syrup

Crust:

  • 2 tbsp coconut oil, melted

  • 1 cup walnuts

  • ¾ cup rolled oats

Instructions

  1. First make the base. In a food processor, add walnuts, oats, and melted coconut oil. Pulse until fully combined into a fine meal. It should be sticky, not dry. If it’s too dry, add a little more coconut oil. 

  2. In a lined muffin tin, add one tablespoon of the crust mix and press down with the bottom of a small cup or a morter to make it smooth.

  3. Bake in oven at 350F for 10 minutes or until golden. Remove from oven and let cool.

  4. In a blender, add coconut yogurt, zest of ¼ lime, ½ of the maple syrup (2tbsp) and coconut oil. Blend until smooth. 

  5. Pour into muffin cups and fill halfway to the top. Place in freezer for 20 minutes to slightly harden before adding the second layer.

  6. Making your second layer by adding Blue Magic coconut yogurt, zest of ¼ lime, and the rest of the maple syrup (2 tbsp). 

  7. Pour into the muffin cups to the top. Top with lime zest, and place in the freezer to set for several hours. 

  8. Keep stored in the freezer. 🙂
