recipes: sneaky veggie potato salad + strawberry lemonade

I have a theory.
The moments our babes remember most won’t be the elaborate parties or the expensive gifts. They’ll remember the batch of strawberry lemonade. Eating together outside. Running barefoot. Us being actually present and focused on them. Getting lost in imaginative play for hours, and just feeling safe and loved.
This little picnic day was my reminder that the best memories really are made in the simple moments. And when things start to feel overwhelming, it’s usually from outside noise that doesn’t actually have a place in my mind or my time. When I bring it back in — to my kids, my home, my work — I almost always feel a TON better.
This strawberry lemonade and sneaky veggie potato salad are on reg rotation this summer, and we literally cant get enough! Theyre the perf compliment to some grilled protien and corn 🙂 🌽

🍓 Strawberry Kiwi Lemonade

this is my all time fav lemonade, and it really benefits form being made a few hours or even the day before so all of the sweet strawberry and kiwi flavors meld into it. It helps take the bite out of the acid in the lemons, and sweetnes is delicatly over time. I just love it so so so much (seriously i start to drool when i think about it) and i hope you do too!
2/3 cup pure lemon juice
4 cups filtered water
2 cups ice
2 cups chopped strawberries
1 cup chopped kiwi
2 tbsp pure stevia extract
1 lemon, sliced for garnish
make it:
add lemon juice, water, and stevia. mix well.
add in fruit and let sit until ready to drink. add ice before serving!
Sneaky veggie potato salad

1 lb baby potatoes boiled and cooled
1 cup fresh carrots, chopped
1 stalk celery, chopped small
1 cup thick Greek yogurt
1 tbsp stone ground mustard
Juice of 1 lemon
2 tbsp extra virgin olive oil
Salt + pepper to taste
make it:
Whisk together the yogurt, mustard, lemon juice, olive oil, salt and pepper. Toss in the potatoes, carrots and celery. Mix, taste, adjust. Refrigerate for an hour so the flavors meld nicely together 🙂
One thing worth knowing — boiling and cooling your potatoes the day before isn’t just easier, it actually makes them better for you. When potatoes cool after cooking they form resistant starch, which your gut genuinely loves. It digests more slowly, keeps you fuller longer, and is gentler on blood sugar. So making this ahead is both the lazier AND the healthier choice. Love when that works out.
