There is soooo much focus on protein lately. And I think that’s GREAT.

Protein absolutely deserves the spotlight. It’s essential for building and maintaining muscle, supporting hormone health, keeping us full longer, stabilizing energy, and helping our bodies recover from the daily demands of life.

But there’s a missing piece of the conversation that is just as important: fiber.

Fiber is one of the most overlooked nutrients in modern diets, yet it’s incredibly important for digestive health, blood sugar balance, heart health, cholesterol levels, and even supporting a healthy gut microbiome. The reality is that most adults aren’t getting nearly enough of it.

So lately I’ve been recreating recipes we all know and love with a goal of including both enough protein and enough fiber to create a truly nourishing meal.

It’s perfect for meal prep because the flavors get even better and the sauce thickens up after a few hours in the fridge. I def did NOT have enough patience for this, but it does see benefits if you do!

Super Good Egg Salad

Ingredien

  • 5 hard boiled eggs
  • Small handful fresh dill, chopped
  • 2 stalks celery, chopped
  • 1 cup chopped carrot
  • 1/4 cup thick Greek yogurt
  • 1 tsp stone ground mustard
  • 2 tbsp sumac (if you don’t have this, it’s still great without.
  • Juice and zest of 1 small lemon
  • Salt +pepper to taste

Preparatio

  1. Step 1Roughly chop your peeled hard boiled eggs. Leave them a little chunky.
  2. Step 2Add to a bowl with the chopped veggies
  3. Step 3In a separate bowl, make your dressing by adding all ingredients to a bowl and mix well.
  4. Step 4Add to egg salad. Place in fridge for an hour to set. I didn’t do this but it really does make a difference in helping the flavors meld together and the sauce to thicken up!
