Chicken + rice in soup is ๐and this version is so fresh and light, perfect for easing us into the cooler months.
I used Ralston Family Farms Basmati rice from Publix, and it yielded the perfect texture for this soup!
Chicken + rice lemon soup:
shredded chicken breast
@ralstonfamilyfarms basmati rice (grab it at Publix!!)
Carrot + onion + celery
Lemon
Salt + pepper
Chicken broth

This protein bowl is super simple to make. And made with a handfuls of ingredients. The only thing I used on my chicken was @yaisthai new Thai BBQ sauce. I’m not usually a fan of store-bought sauces bc of so many added inflammatory ingredients, but Yai’s Thai makes really clean sauces with so much authentic flavor. It’s just so yummy, made super clean, and available at @sprouts !

Did you know that gelatin is actually really good for you?
With protein, amino acids, gut and sleep benefits, it’s worth having some around in your pantry to make things like these super easy gummy bears!
These are seriously too easy and simple to justify buying store bought versions, that have tons of refined sugar and flavors. My toddlers love making these, they’re just so fun!
I use The Squeezed Juice pomegranate juice because it’s pure juice with nothing added and it’s not from concentrate. Pomegranate juice has the perfect amount of sweetness and flavor for these gummies!
๐งธEASY GUMMY BEARS
- 1/4 cup grassfed gelatin (I used grassfed beef gelatin)
- 1 cup @thesqueezedjuice pomegranate juice (love this flavor for Fall!)
MAKE IT:
1. In a saucepan, heat juice until it begins to simmer.
2. Remove from heat and stir in gelatin, until completely dissolved.
3. Place into molds, or in a glass dish, if you don’t have a mold. And refrigerate for about 30 min to harden.
4. Enjoy the best little healthy treat around :)

The only thing I don’t typically like to prep is eggs. I prefer them freshly made., and when I’m short on time or energy, boiled eggs 7 min do juuuuussst fine โบ๏ธ (I usually eat 4, and share with my kids๐) ๐ฅ๐ฅ๐ฅ๐ฅ
I don’t buy coffee creamers, I make all my own and have narrowed it down to no fail recipes and this vanilla creamer is my staple โ๏ธ
My kids LOVE oats but it’s a hassle to make on my busy work mornings, so prepping it before is great.
Quiche is great because it’s a handheld food, and can be eating while on the run. These quiche from @sunbasket are so darn good that they did not last until the next day tbh ๐ next time I’ll make like triple.

-Washed/cut/dry fruit (this really encourages us to eat fruit throughout the day bc u can just grab and go

And the taste of coconut always makes me feel relaxed vibes.

๐ซI make my juices in my juicer or by blending the fresh ingredients in my blender with a little water to get it to blend to a smooth consistency. No need to strain as long as you get it smooth! That fiber is good stuff, you don’t want to strain it out. โบ๏ธ

โญ๏ธโญ๏ธMy two stars for flavor here are the apples and quality cinnamon. Cinnamon quality DOES make a difference in the taste of your cake. My favorite is Watkins Organic Ground Cinnamon. Not only for the pretty @Watkins.1868 bottle, but It’s cassia cinnamon has the sweetest aroma and taste. ๐งก

๐Bc Fall is literally around the corner and I don’t know about you, but my taste buds have been begging for Fall flavors for weeks now.
I love my no-bake, cold desserts but in the cooler months, we love having oven-baked healthier, gluten and refined sugar free desserts.
Nothing beats the smell of warm cinnamon and apples baking in the oven ๐งก๐
Did you know that not all tuna is created equal?
Safe Catch uses sushi grade tuna and tests every fish for mercury. It’s the lowest mercury tuna on the market.
I’m not HUGE on meal prep, but these things help SAVE me time during the week:
-wash/cut/dry fruit so it’s ready to go with little mouths are hungry
-high protein lunch options to grab and go, like this awesome tuna salad ;)
-homemade sourdough bread (for almond butter toasts, to scoop up tuna or chicken salads with, comes in handy for so many things)

Mediterranean Tuna Salad:
-1/4 cup Green yogurt
- 2 tbsp mayo
- 1 tbsp Stone ground mustard
- 1 head Parsley, super finely chopped
- 1 English Cucumber, finely chopped
- 3 cans @safecatchfoods tuna
- 1 tbsp @gourmendfoods low fodmap green onion salt(chefs kiss๐)
- 1/2 cup Kalamata olives, chopped
Add everything to a bowl and mix. Store in an airtight container in the fridge for easy lunch for days :)
It’s way too hot out ๐ฅต
But we love a high protein, no tummy trouble dessert and these lactose free cheesecake cups fit the bill! ๐คฉ
Made with simple ingredients, it comes together in seconds so you can prep it before dinner, pop it in the fridge for it to be set by dessert time ๐
I started enjoying cream cheese again when I discovered Green Valley’s lactose free cream cheese at the grocery store a few years ago, it’s so creamy and LUSH.
To keep the whole recipe lactose free, you can make your own Greek yogurt by straining Green Valley’s lactose free yogurt for a few hours in a cheesecloth!
Protein Cheesecake Cups

These cinnamon rolls are perfectly FLUFFY with so much warm sweet cinnamon taste. Enjoy them as a morning bun style like I do without icing, or lather it up like little brother did. Both ways are delicious.

Does cooking with red meat feel intimidating?

Starbucks has over 50 grams of sugar in a grande PSL.
And dare I say, this one froths up better than any Starbucks drink I’ve ever had.
My version has real pumpkin in it, no added sugar, and uses simple ingredients. You can make a big batch of this and store it in the fridge for the week.๐โ๏ธ

- 2 apples
- handful of dark chocolate, melted (I use @hukitchen)
- 1/4 cup drippy almond butter (can use peanut if you prefer!)
- 2 superfood boosters (@kraveplus)
- 1 tbsp flax meal
-1 tbsp hemp seeds
- 1/2 cup Greek yogurt

Have you tried chicken enchiladas?! Game changer for me. I ate the leftovers for lunch the next day because it’s just so darn good.
And instead of using tomato paste (gives me reflux), I used fresh tomatoes and added in PUMPKIN to thicken the sauce. No flour, no butter, no gluten! Also no fussing over making a roux. ๐ต๐ซ just easy peazy, add it all in a bowl and blend. Could not be any bit easier unless you bought a sauce already made (but those are made with paste too ;)
WORLD’S EASIEST ENCHILADAS
- ground chicken breast
-shredded cheese
-tortillas
-wild rice
-enchilada sauce: tomatoes, olive oil (I used @garciadelacruzoliveyou ), pumpkin, ๐, garlic powder + onion powder (I use @gourmendfoods to keep it low fodmap), paprika, salt + pepper

CHEESY GREEN PASTA:
-1 box macaroni pasta, cooked according to directions (reserve 1 ladle of pasta water for your green sauce) ๐
-green sauce:
1/2 cup almonds,
2 handfuls of spinach,
1 handful fresh basil,
1 box @rusticbakery cheese coins (๐ค)
Juice of 2 lemons
Salt and pepper to taste
* blend to combine.
In a baking dish, combine pasta with sauce and bake @ 350 for about 20 min. Enjoy immediately. Optional: add more fresh basil and crushed cheese coins on top for a little crunch โบ๏ธ
