HEALTHY CORNBREAD
Idk about you but I LOVE cornbread during the cooler months. Something about it is just so comforting and cozy.
We keep this recipe gluten free by using coconut flour and refined sugar free by using the wonderfully amazing Joolies date syrup made from organically grown, fresh California dates.
This cornbread is gluten free and refined sugar free. Used coconut flour and date syrup in place of the traditionals. You won’t miss it, and it’s got a better nutritional profile for ya.
This is a super unfussy recipe. Everything is quickly mixed together in one bowl and then the oven does the work. It takes minutes to put together and then you have this awesome balanced sidekick to soups, proteins, or any meal really.
INGREDIENTS
-1 cup cornflour (medium grain is best)
-1 cup coconut flour
-2 tsp baking powder
-1/2 tsp baking soda
-1/2 tsp salt
3 tbsp melted coconut oil
-1 1/4 cup milk (I used almond)
-2 eggs
-1/3 cup maple syrup
optional veg add in:
-1/2 cup corn, chopped small
-1/2 cup celery, chopped small
MAKE IT
in a bowl, add dry ingredients, then wet, and mix.
add in chopped veg if using.
place batter in a small loaf pan and bake @ 400 for about 25 minutes. Remove when a fork comes out clean.
