PROTEIN BLUEBERRY BANANA BREAD MUFFINS

INGREDIENTS

  • 2 ripe bananas

  • 2 eggs

  • 4 tbsp coconut oil melted

  • 1/2 cup Greek yogurt

  • 1/3 cup maple syrup

  • 1 tsp vanilla

  • 1 tsp baking powder (or 2 tsp baking soda)

  • 1/2 tsp salt

  • 2 cups almond flour

  • 1/2 cup protein powder (I use whey isolate, unflavored)

  • 1/2 - 1 cup frozen blueberries (I used frozen wild blueberries because they are small and the perfect size for muffins but any will work!)

MAKE IT

  1. Preheat oven to 350F.

  2. Smash banana in a bowl with fork.

  3. Add eggs, melted coconut oil, vanilla, maple syrup, Greek yogurt and mix.

  4. Add almond flour, protein powder, baking powder, salt and mix to incorporate.

  5. Pour in blueberries and fold into the batter

  6. In a lined muffin tin, add batter to nearly full.

  7. Bake for 25 minutes or until a fork comes out clean.

  8. Store in the fridge.

Protein cream cheese glaze:

  • 1/4 cup cream cheese

  • 1/3 cup Greek yogurt

  • 1/2 cup protein powder

  • 2 tbsp maple syrup

MAKE IT

  1. Mix all ingredients until fully combined. Top cooled muffins with glaze. Enjoy 😉
