HEALTHIER CINNAMON SUGAR DONUTS

Try these once and get as hooked on them as we are. They’re light, perfectly sweetened with coconut sugar and apple sauce, and are so easy to make that a toddler can do it!

Healthier Cinnamon Sugar Donuts

INGREDIENTS

  • 2 eggs

  • ½ cup pumpkin

  • ½ cup apple sauce

  • ½ cup coconut sugar

  • 1 tsp vanilla

  • 1 tbsp pps or cinnamon

  • 1 tsp baking soda

  • 2 cups almond flour

  • ¼ cup arrowroot

  • ¼ cup coconut flour (or sub more almond)

MAKE IT

  1. Preheat oven to 350F.

  2. In a bowl, mix eggs, coconut sugar until creamy.

  3. add in apple sauce, vanilla, and mix again.

  4. Add all dry ingredients and mix.

  5. Spray a mini muffin tray with oil.

  6. Pour batter into a ziplock bag and cut a small edge off so you can pipe the mixture into the muffin tray. Fill each mini muffin cup about ¾ of the way.

  7. Bake for 20 minutes or until a fork inserted in the middle comes out mostly clean.

  8. Brush a thin layer of melted butter (or milk if you’re avoiding butter) and roll in coconut sugar.
