RAW CARROT SALAD

A healthy raw carrot salad with NO GREENS!

Combining the natural sweetness of carrots with the crunch of pecans and creaminess of almond butter! Best of all, it takes less than 2 min to put together.

WHAT YOU NEED

· 2 carrots, shredded or sliced with a peeler

· 2 tbsp pecans

· ¼ cup almond butter

· 1-2 tbsp maple syrup

· 1 tbsp balsamic vinegar

· 2 tbsp feta cheese

· 1 tbsp sauerkraut (optional)

HOW TO MAKE IT

1. Shred or slice carrots using a peeler for softer texture.

2. In a bowl, mix carrots, pecans, almond butter, maple syrup, and balsamic vinegar.

3. Top with feta cheese and sauerkraut (if using).

4. Serve immediately and enjoy a gorgeous raw carrot salad!
