BANANA COCONUT CAKE
This Banana Coconut Cake is high in protein, gluten and refined sugar free, couldn’t be easier to make, and dirties up ONE DISH ONLY!
It’s meal prep friendly. And I can’t tell you how helpful it is to have a high protein sweet treat on hand during my busy days, it really does save me!
This cake is so simple to put together, grab a box of your fav pancake mix (I use Simple Mills bc it’s gluten free and high in protein) and whip this up practically with your eyes closed.
INGREDIENTS
1 box pancake mix (I use Simple Mills protein mix)
1 scoop protein powder
2 ripe bananas
¼ cup shredded coconut
2 eggs
1 tsp vanilla
¼ cup milk
MAKE IT
Preheat oven to 350F.
Grab a bowl, and smash the bananas with a fork.
Add in eggs, vanilla, milk, and coconut shreds. Mix.
Add pancake mix and protein powder and fold in.
Pour onto a sheet pan lined with parchment paper. Sprinkle with more coconut shreds (totally optional).
Bake for about 15 min or until a fork comes out mostly clean.
Cut up into squares and store in the fridge for an easy high protein snack though the week. 🙂
