Sunflower Cookies

These cookies are a real treat!
Gluten free, high in protein, and free of refined sugars.

Ingredients

  • 1 cup sunflower butter

  • 2 eggs

  • ¼ cup applesauce

  • ⅓ cup coconut sugar

  • 1 cup coconut flour

  • ¼ cup unflavored collagen

  • 1 ½ tsp baking soda

  • ¼ tsp salt

Instructions

  1. in a bowl, add all wet ingredients and mix. The add in dry. Mix again.

  2. Refrigerate dough while oven preheats to 350. (Don’t skip the fridge time, it really helps the cookie consistency!

  3. Line a baking sheet with parchment paper and form cookies with about 1 tbsp of dough for each.

  4. bake for 8 minutes and then let cool slightly before eating. The cookies will firm up after a few minutes!

  5. that beautiful vibrant green color will develop and get deeper over the next few hours! But you can eat them right away!

  6. store in the fridge 🙂
