CARAMEL FUDGE PROTEIN BROWNIES
Caramel and fudge sweet potato protein brownies are my afternoon saving grace lately.
it curbs the sweet cravings and gives me the energy boost I need around mid-afternoon. High protein, high fiber means it’s blood sugar and hormone balancing.
This recipe is easy, make in one bowl, and really forgiving to too much or too little of an ingredient. If the mix is too dry, add a little more liquid. If it’s too wet, add a little more cacao powder. Easy Peazy.
Ingredients
1 boiled or baked sweet potato
¼ cup maple syrup or honey
¼ cup almond butter (Georgia grinders is my favorite)
2 eggs
¼ cup collagen powder
½ cup cacao powder
2 tbsp flax meal
1 tsp cinnamon
½ cup cacao powder
1 cup oat flour
¼ cup fudge (I use Coop’s fudge)
¼ cup caramel sauce
Instructions
Peel sweet potato and smash it with a fork. You want it pretty smooth.
Add all well ingredients and mix.
Add dry ingredients to the mixture and mix again.
Place in an oven safe baking dish (like a Pyrex).
Dollop in the fudge and caramel sauces, and swirl around with a stick or fork.
Bake for about 25 minutes or until a knife can be inserted and comes out mostly clean. (You want the sweet spot of done-ness, not overd or under.
after it cools, cut into slices and store in the fridge for a week of easy afternoon snacks or late night, blood sugar stable treats!
