I feel like I’m sharing a piece of my heart with this recipe. They’re my family favorite cookies and we make them every week, several times a week lately!
I’m the kind of girl that needs a dessert after every meal. And that means I want them to be healthier, easy to make and satisfying or else I’ll be looking for a sweet treat in less healthy places.
These cookies come together in one bowl and with just a few ingredients.

healthier peanut butter cookies
1 cup peanut butter
1 egg
½ cup maple syrup
½ cup almond flour
Pinch salt
1 tsp vanilla extract
make it
Mix wet ingredients.
Add dry and mix again.
Place mix in the fridge to set while you preheat the oven to 350F.
Roll heaping tablespoon size of batter into a ball.
Dip each ball into coconut sugar, then flatten with your hands.
Use a fork to make the cross cross pattern.
Bake for 8 minutes. Cookies will harden up as they cool. Enjoy 🙂
