Soft, fluffy, full of peanut butter and jelly flavor that feels nostalgic and elevated at the same time. These are my pb & j dump and bake cookies and youโ€™d never know theyโ€™re gluten free, refined sugar free, full of healthy protein and fats, and just couldnโ€™t be simpler to make!

These are the peanut butter and jelly version. With jelly pressed right into the top before they bake. Theyโ€™re gluten free, high in protein, made with nothing but real food ingredients, and more balanced than anything youโ€™re going to find at any store or bakery. annnnnnd they donโ€™t taste โ€œhealthyโ€, they taste peanut buttery, smooth, nostalgic with the pb&j flavors, and it all comes together to make an elevated, taste first, health right after, perfect late night or mid-day little treat that gives me all of the good feels inside. theyโ€™re truly, so so so good.

This is kind of my whole thing โ€” I love sweet treats just as much as I love taking care of my body through food. Those two things are not opposites. Food is meant to be enjoyed and itโ€™s also what fuels us, and when you find recipes that do both at the same time, you hold onto them. This is one of those recipes.

What makes these actually good for you

No flour, no refined sugar, full of nutritionally dense foods.

Peanut butter is the base here, obvi. Itโ€™s a healthy fat and fats are what your hormones need to do their job well. Healthy fat is one of the most important things you can eat for hormone balance and stable energy throughout the day, and I feel like its missed by so many.

Maple syrup is the sweetener, and unlike refined sugar it hits the bloodstream a little more gently.

Pure whey protein is my favorite for baking with protein powder. I usually am not a fan of any flavored protein powder. Iโ€™ve tried so amny but am always disappointed. Pure whey is a good choice and it just melts into these soft, fluffy cookies perfectly. More protein means a slower, steadier energy release instead of that spike-and-crash feeling.

Almond flour instead of regular flour keeps these gluten free and adds another layer of healthy fat and a little more protein. It also gives the cookies that soft, slightly dense texture that makes them so good.

Because I have 3 babies running circles around me and one of them is just a tiny little babbbbbe that wants me to hold her all of the time, I have very little time these days for joy baking, so easy hacks and shortcuts that donโ€™t shortcut the flavor or texture are what I lean into!

These are a dump and bake, which means one bowl, no mixer, no chill time. You just mix everything together, scoop, press a little jelly into the top of each one, and bake.

Ingredients:

  • natural peanut butter (I only buy pb that has peanuts and salt as ingredients, nothing else needs to be in our peanut butter!)

  • Milk of your choice

  • Vanilla extract

  • Maple syrup

  • Pure whey protein (any clean protein powder works too)

  • Almond flour

  • Baking soda

  • Pinch of salt

  • Your favorite jelly for the top

Ingredients

  • 1cup peanut butter
  • 1/2cup milk
  • 1/2tsp vanilla
  • 1/4cup maple
  • 1cup pure whey protein powder (or your fav clean protein powder)
  • 1/2cup almond flour
  • 1tsp baking soda

Directions:

  1. preheat oven to 350F
  2. In a bowl, add all wet ingredients, mix
  3. add in all dry ingredients, mix again.
  4. using a cookie scoop or a large tablespoon, scoop our dough and place onto a parchment lined baking sheet.
  5. Using the bake of your spoon, make a small indentation in the center of each cookie and put a dollop of your favorite jam in the middle
  6. Bake for 9 minutes, enjoy ๐Ÿ™‚
