Oat Bran with Cinnamon Apples
My new favorite breakfast: Oat Bran with cinnamon apples.
Oat bran comes from the Oat Grain and it is the layer just beneath the hull of the grain. It's a little higher in its nutrition values, with more protein and fiber than oatmeal. Read more about oat bran, here.
This recipe is hearty and healthy and can be made in about 10 minutes. It's great for picky little eaters, too, my baby loves it!
I like to top mine with a little greek yogurt to make it extra creamy. Cottage cheese would go well here, too.
Ingredients
Scale1x2x3x
⅔ cup oat bran (I use Bob's Red Mill)
2 cups water
1 large apple, cubed
1 tablespoon lemon
1-2 tablespoons cinnamon
pinch of nutmeg
pinch salt
spoon of greek yogurt or cottage cheese
optional: 2 tablespoons of brown sugar
Instructions
Cook the oat bran according to instructions.
Toss cubed apples with lemon, cinnamon, and with optional brown sugar if using.
Heat a saucepan to medium/low heat and add the apples. Cook them down as much as desired. I leave it for about 10 minutes. Stir occasionally.
To serve: layer a bowl with the oat bran, cooked apples, and the greek yogurt.
Eat and enjoy! This warm cereal is best fresh.
