CINNAMON APPLE SWIRL COFFEE CAKE
This Cinnamon Apple Swirl Coffee Cake is everything you want in an indulgent cake, made healthier.
Warm cinnamon, nutmeg, and cloves baking in the oven brings about the most cozy, warming feeling that is hard to put into words. I just love cooler season baking moments, they really make my heart sing.
INGREDIENTS
For the cake:
2 cups spelt flour or your fav gluten-free blend
1 tsp baking powder
1 tsp baking soda
pinch of salt
5 tbsp butter, softened (for the cake)
½ cup coconut sugar
2 eggs
2 tsp vanilla extract
¼ cup apple sauce
2 apples
2 tbsp cinnamon
MAKE IT
Preheat oven to 350F.
In a bowl, add softened butter, and the ½ cup coconut sugar. Mix with a handheld mixer then add in eggs, vanilla, and apple sauce and mix again.
Add in flour, baking powder, baking soda, salt, ¾ cup coconut sugar, and cinnamon.Mix.
Peel and slice your apples. I like to cut mine into thin slices so it sort of layers with the cake and melds with it instead of sticking out when I cut into cubes. But feel free to cut them your favorite way.
Mix apples with apple sauce + 2 tbsp cinnamon. Add the apples into the batter and fold in to incorporate.
Line a loaf pan and pour in batter. Sprinkle with more cinnamon on top for extra warmth.
Bake for about 30 min or until a fork comes out almost completely clean.
Eat as is or top with my better-for-you-icing (recipe below).
Better-For-You ICING:
¼ cup greek yogurt
¼ cup apple sauce
1 scoop collagen peptides (optional but helps consistency of the glaze + adds protein 😉).
MAKE IT
Mix all ingredients together.
Pour over cake and enjoy. 😉
