CHICKEN MEATBALLS

High in protein, loaded with fresh veggies, and made in one bowl. This recipe is a family favorite and a staple in my house!
Just try them once and I’m sure they’ll be a favorite in yours, too!

CHICKEN MEATBALLS

Ingredients

  • 1 pack of ground chicken

  • 1 cup low-fat cottage cheese

  • 2 eggs

  • ½ cup breadcrumbs

  • 1 head of Italian parsley, finely chopped

  • ½ onion, finely chopped

  • 2-3 carrots, grated on a box grater

  • 1 tsp each of paprika, oregano, thyme

  • salt and pepper to taste

Instructions

  1. Add all ingredients to a bowl and mix well. The batter should be thick and mold able.

  2. using an ice cream scooper, scoop out batter and form into ball with hands.

  3. Heat a cast iron pan over medium/high heat and spray with avocado oil spray.

  4. Arrange meatballs in pan. Turning several times during cook to ensure all sides get browned and crispy.

  5. They are done when internal temp reaches 165. This takes a few minutes!

  6. Enjoy right away or cool before freezing for longer storage!
