There are some desserts that look impressive but secretly couldn’t be easier, and coffee cake is definitely one of them.

Coffee cake is one of my favorite desserts. And it can be made with very little time and patience because it’s so forgiving and just…easy. No fancy techniques, no decorating skills, and no stressing over whether it turns out perfectly. It almost always does.

This version might be my favorite yet. This coffee cake is soft and cozy with the most irresistible raspberry cream cheese topping. Every bite has a little bit of everything, which is exactly how I like my desserts.

It’s the kind of recipe that feels special enough to bring to brunch, baby showers, holidays, or when friends stop by, but it’s simple enough to make on an ordinary Tuesday just because you’re craving something cozy.

I also love that it tastes just as good the next day. If you happen to have leftovers (which isn’t guaranteed around here), it’s perfect with a cup of coffee in the morning or as an afternoon treat.

A few tips before you get started:

  • Fresh or frozen raspberries both work well. If you’re using frozen, thaw them first.
  • Let the cake cool for about 20 minutes before slicing so the cream cheese layer has a chance to set.

RASPBERRY CREAM CHEESE COFFEE CALE

Refined sugar free, gluten free, 1 bowl, and super delicious!

Ingredients

  • 2 eggs
  • 1/2 cup almond butter
  • 1/2 cup milk
  • 1 tsp vanilla
  • 2 1/2 almond flour
  • 3/4 cup cane sugar or coconut sugar
  • 1 tsp baking soda
  • 1/4 tsp salt
  • Raspberry cream cheese swirl:
  • 1/2 cup softened cream cheese
  • 1/2 cup fresh raspberries

Preparation

  1. Step 1Preheat oven to 350 F.
  2. Step 2Add all wet ingredients to a bowl and mix well.
  3. Step 3Add in all dry ingredients and mix again.
  4. Step 4Pour into a lined or buttered baking dish.
  5. Step 5To make the swirl:
    In a bowl add fresh raspberries and smash well with a fork. Add in softened cream cheese and mox well.
  6. Step 6Add the raspberry cream cheese swirl on top. Smooth it out and either leave on top as is or swirl it in with a fork
  7. Step 7Bake for approx 30-35 minutes. (I like to check at 25 minutes and add another 10 as needed)
