Brown Butter Banana Bread Chocolate Chip Cookies

So many good flavors in one, awesome cookie. It’s like the best worlds colliding of a banana bread, a chocolate chip cookie, and the deep caramel notes of brown butter. On top of ALL THAT, it’s made with simple wholesome ingredients so it’s easier on our skin, hormones, energy, gut, all of it. Free of gluten and refined sugars, and ACTUALLY EASY to throw together.

BROWN BUTTER BANANA BREAD CHOCOLATE CHIP COOKIES

Truly easy to make with a few pantry staples, and free of gluten and refined sugars. It’s the very best of banana bread and cookies, collided!


Ingredients

  • 1/2 cup grassfed butter
  • 1 egg
  • 2 tbsp kefir or whole milk or heavy cream
  • 3/4 cup coconut sugar
  • 1 ripe banana
  • 1 tsp vanilla extract
  • 1 1/2 cup almond flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 1/4 cup dark chocolate chips

Preparation

  1. Step 1MAKE YOUR BROWN BUTTER:
    In a saucepan over medium heat, add butter and melt. Continue cookie, stirring frequently until butter turns to a deep golden brown color and smells like caramel. Remove from stove and let cool a little before adding to other ingredients.
  2. Step 2In a bowl, add banana and mash it up
  3. Step 3Add in egg, kefir, and vanilla. Mix well
  4. Step 4Add in the cooled brown butter and mix
  5. Step 5Add in all dry ingredients, mix well
  6. Step 6Pour in chocolate chips and mix.
  7. Step 7ESSENTIAL STEP! Set the bowl in the fridge to chill for at least an hour. It’s better if you wait 4 or more
  8. Step 8Preheat oven to 350F
  9. Step 9On a parchment lined baking sheet, scoop out dough with a cookie scooper or about the size of 2 tablespoons. Place on baking sheet 2 inches apart
  10. Step 10Bake for 11 minutes, then let cool on top of the oven for a few minutes. They’ll be underdone when you first get them out, but They will harden up a they cool and be more manageable. If you want them to be perfect circles, you can use the steel top of a mason jar to round them out in the first minute after getting them from the oven. For an example of this, see me video!
