Description

Sweet carrots, crunchy pecans, and creamy almond butter make this salad one that I love bringing to a dinner. Its flavors are enchanting and tasty for all!


Ingredients

  • carrots, shredded or sliced with a peeler

  • 2 tbsp pecans

  • 1/4 cup almond butter

  • 1-2 tbsp maple syrup

  • 1 tbsp balsamic vinegar

  • 2 tbsp feta cheese

  • 1 tbsp sauerkraut (optional)


Instructions

  1. Shred or slice carrots using a peeler for softer texture.

  2. In a bowl, mix carrots, pecans, almond butter, maple syrup, and balsamic vinegar.

  3. Top with feta cheese and sauerkraut (if using).

  4. Serve immediately and enjoy!
