CINNAMON APPLE SWIRL COFFEE CAKE

Description

A healthier take on a cinnamon apple coffee cake! Indulgent but doesn’t wreck your macros for the day!


Ingredients

INGREDIENTS

For the cake:

  • 2 cups spelt flour or your fav gluten-free blend
  • 1 tsp baking powder

  • 1 tsp baking soda

  • pinch of salt

  • 5 tbsp butter, softened (for the cake)

  • 1/2 cup coconut sugar

  • 2 eggs

  • 2 tsp vanilla extract

  • 1/4 cup apple sauce

  • 2 apples

  • 2 tbsp cinnamon

Better-For-You GLAZE:
  • 1/4 cup greek yogurt

  • 1/4 cup apple sauce

  • 1 scoop collagen peptides (optional but helps consistency of the glaze).

Instructions

For the Cake:
  1. Preheat oven to 350F.

  2. In a bowl, add softened butter, and the 1/2 cup coconut sugar. Mix with a handheld mixer then add in eggsvanilla, and mix again.

  3. Add in flour, baking powder, baking soda, salt, 3/4 cup coconut sugar, and cinnamon.Mix.
  4. Peel and slice your apples. I like to cut mine into thin slices so it sort of layers with the cake and melds with it instead of sticking out when I cut into cubes. But feel free to cut them your favorite way.

  5. Mix apples with apple sauce + 2 tbsp cinnamon. Add the apples into the batter and fold in to incorporate.

  6. Line a loaf pan and pour in batter. Sprinkle with more cinnamon on top for extra warm feels.

  7. Bake for about 30 min or until a fork comes out almost completely clean.

  8. Eat as is or top with my better-for-you-icing (recipe below).

 
Better-For-You GLAZE:
  1. Mix all ingredients together. 
  2. Pour over cake and enjoy. 😉
